Tahini Dip

1 jar Tahini approx 250g
salt to taste
1/2 to 1 glass of water (depends how runny you like it)
Fresh lemon juice or bottled lemon juice (fresh is better), again to taste
1-2 garlic cloves (optional)

Empty tahini into large bowl and beat, tahini does sometimes separate in the jar but that's OK just use all of it and beat it up together. 

Some people prepare this dip in a food processor but I do not like it because too much air goes into the mixture and it goes all frothy.  This way takes longer but its nicer if you ask me.

Gradually beat in about 1/2 glass of water then some lemon juice and continue adding more water and lemon alternatively to make the mixture as thick and as lemony as you like, its best to make it thicker and thin it out by adding extra water, be careful not to add too much water.  Stir in the garlic and chill in the refrigerator. 

I like to serve this as it comes but you can also serve this with sprinkled with cumin powder or a drop of balsamic vinegar.
